*3  Observed foods to be out of temperature in the 2 door unit (cooler) on the prepline. Foods that had been out of the walk-in cooler for more than 2 hours and were potentially hazardous were disposed of (see voluntary destruction agreement). Foods that had been out of the walk-in cooler less than 2 hours were placed in the freezer. Discussed keeping food on ice and checking with a metal stemmed thermometer during food preparation until unit is serviced. Food is not to be kept in this unit w/out ice, until unit is serviced.
